Chia seeds are an extremely nutritious and versatile food to include in your breakfasts. They’re nutrient-dense, rich in fibre, and the omega-3 fatty acid ALA.

One of the issues with whole seeds comes with digestion, as they can be difficult to break down in our gut. By soaking chia seeds overnight in milk or plant-based alternatives, you’re helping to aid digestion, therefore improving your body’s ability to extract vital nutrients.

Our team of in-house nutritionists have put together this quick and delicious recipe that’s best prepared in the evening allowing the seeds to soak overnight. If you’re looking for some crunch, add a handful of homemade muesli or granola.

Otherwise, onto the good stuff.

Prep and cooking time: 20 minutes
Serves: 2

Ingredients

3 tbsp chia seeds
150ml tinned coconut milk
150ml water
1 mango, diced
2 tbsp toasted cashew nuts
1 small handful fresh mint, chopped

Method

  1. Combine the chia seeds, coconut milk, and water into a bowl and mix well. Let this sit for 15-20 minutes (or ideally overnight), until the chia seeds absorb the liquid and a pudding-like consistency is formed.
  2. Divide the chia pudding into 2 bowls or glasses, layered with the fresh mango.
  3. Top with the toasted cashew nuts and mint.
