Salad sandwich

Ingredients

Serves: 2

  • 4 small slices sourdough, seeded, or rye bread
  • ½ avocado avocado, smashed
  • 2 tbsp mayonnaise
  • 3 slices Cheddar cheese (1.5 per person = 9g protein)
  • 1 beetroot, thinly sliced
  • 1 small carrot, grated
  • ¼ small cucumber, sliced
  • ¼ small red onion, thinly sliced
  • 1 small tomato, thinly sliced
  • ½ small red pepper, thinly sliced
  • 1 small handful iceberg lettuce

Method

Step 1

Divide the ingredients evenly between the two sandwiches. Place the top slice of bread on the sandwich and squish down firmly. Cut in half and enjoy!
