Ingredients
Serves: 4
- 4 fresh peaches
- 500ml greek yoghurt
- 16 tbsp homemade toasted muesli
- 200g oats
- 100g pistachios
- 80g coconut flakes
- 2 tsp vanilla extract or paste
- 100ml coconut oil or butter, melted
- ½ tsp salt
Method
Step 1
Slice the peaches into wedges and remove the stone.
Step 2
Layer some yoghurt at the bottom of 4 glass pots, followed by a few peach slices, and 4 tbsp of toasted muesli. Repeat in all 4 pots.
Step 3
Place in the fridge and chill until ready to serve.
Step 4
If making the pistachio muesli, preheat the oven to 180c.
Step 5
Line a large baking tray with parchment paper.
Step 6
Mix all of the ingredients together in a large bowl, mixing thoroughly until the oats are evenly coated in the oil.
Step 7
Spread out on the prepared baking tray.
Step 8
Bake for 15mins, then remove from the oven and stir well.
Step 9
Press the granola down with the back of a spatula and cook for another 10-15mins, until lightly golden.
Step 10
Allow to cool completely on the baking tray for 1hr before transferring to a container. Makes 10 servings.
