Ingredients

- 4 small slices sourdough, seeded, or rye bread
- ½ avocado avocado, smashed
- 2 tbsp mayonnaise
- 3 slices Cheddar cheese (1.5 per person = 9g protein)
- 1 beetroot, thinly sliced
- 1 small carrot, grated
- ¼ small cucumber, sliced
- ¼ small red onion, thinly sliced
- 1 small tomato, thinly sliced
- ½ small red pepper, thinly sliced
- 1 small handful iceberg lettuce
Method
Step 1
Divide the ingredients evenly between the two sandwiches. Place the top slice of bread on the sandwich and squish down firmly. Cut in half and enjoy!
