Ingredients

Serves: 2

  • 2 tomatoes, sliced
  • ¼ small red onion, finely sliced
  • 1 small handful fresh mint, finely sliced
  • 1 small handful fresh parsley, finely sliced
  • 1 tbsp pomegranate seeds
  • ½ lemon, juiced
  • 1 tbsp extra virgin olive oil
  • 1 small garlic clove, minced
  • ½ tsp zaatar spice

Method

Step 1

Layer the tomatoes, onion, fresh herbs, and pomegranate seeds on a plate.

Step 2

Mix lemon juice, olive oil, garlic, and zaatar as the dressing to top the tomato salad.
