Ingredients

- 250g prawns
- 1 small avocado
- 2 little gem lettuces
- ½ cucumber
- 1 lemon
- 2 tbsp mayonnaise
- 2 tbsp Plain natural or Greek yoghurt
- 1 tbsp tomato puree
- ½ tsp paprika
- 1 tsp Worcestershire sauce
Method
Step 1
Bring a saucepan of water to a boil and add both packets of prawns. Cook for 3-4mins, until pink and cooked through. Drain and set aside.
Step 2
In a small bowl, mix together the lemon juice, mayonnaise, yogurt, tomato, and paprika.
Step 3
Mix the prawns into the sauce.
Step 4
Line 2 glasses around the sides with the diced avocado. Then divide the shredded lettuce and diced cucumber between the glasses. Top with the prawn cocktail mixture and serve.
