Ingredients

Serves: 8

  • 1 large ripe banana, mashed
  • 160g rolled oats
  • 60g desiccated coconut
  • 60g ground almonds (almond flour)
  • 5 tbsp coconut oil
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 tbsp water
  • ¼ tsp bicarbonate of soda
  • 80-100g dark chocolate or vegan chocolate, melted

Method

Step 1

Preheat the oven to 180°C/160°C fan.⁠

Step 2

In a large mixing bowl, add the banana, oats, coconut, ground almonds, and a pinch of salt.⁠

Step 3

Add the coconut oil, vanilla, water, and baking soda.⁠

Step 4

Place baking paper on a baking tray and form the cookies into 1-1½ tbsp-sized balls, flatten slightly.⁠ This mixture should make 16 balls.

Step 5

Pop the baking tray in the oven and bake for 30mins.

Step 6

In a small, heatproof bowl, melt the chocolate in the microwave for 30-60secs, or over a double boiler.

Step 7

Allow the biscuits to cool on the baking tray before using a teaspoon to coat them with the melted dark chocolate. Let the chocolate set before eating.
