The fobnobs recipe is almost identical and rewritten for Americans. You could just cut out the chocolate to get Anzac cookies.

Are these freezable? They are quite dry and would be better with a tiny bit of sweetness – would agave or honey be OK?

How many carbs in the Anzacs please?

Katherine

I worked out these are 2 carbs per portion.

I’ve made 12 out of the recipe, so each cookie is 2/3 of a carb portion!

I don’t eat nuts or coconut. Is there anything I could use as a replacement for the almonds and coconut? I have been searching for a low sugar cookie recipe and thought this would be great.

Hi Sharon, thanks for your comment. You could try using this ingredient list instead to avoid the almonds and coconut:

  • 1 large ripe banana, mashed
  • 200g rolled oats or gluten free oats
  • 1 egg
  • 5 tbsp coconut oil
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 tbsp water
  • ¼ tsp baking soda

I am due to go back to work on 29th June. I am a community nurse so driving round a lot! What can I eat during the day? Something easy to carry round with me.
