Ingredients

Serves: 2

  • 1 tbsp extra virgin olive oil
  • 1 small red onion, diced
  • 1 red pepper, thinly sliced
  • 350g chicken breast or pork tenderloin, sliced
  • 1 tbsp hot paprika powder
  • ½ tbsp tomato puree
  • 100ml chicken stock
  • 50ml soured cream
  • 200g green vegetables
  • 40g uncooked brown rice (optional)

Method

Step 1

Heat the olive oil in a medium, non-stick frying pan, over high heat.

Step 2

Fry the onion and red pepper for 1-2mins, until softened.

Step 3

Add the chicken or pork, and fry until browned.

Step 4

Add the paprika, tomato puree, chicken stock, and sour cream, and cook for another 5-8mins.

Step 5

Steam your preferred vegetables and serve with the chicken and 50g cooked brown rice per serving (if using).
