Ingredients
Serves: 4
- 4 corn on the cobs
- 2 tbsp sour cream
- 80g feta
- ½ small lime, juiced
- ⅛ tsp chilli paste (optional)
- ⅛ tsp ground smoked paprika
- 1 small handful fresh coriander, finely sliced
- 30g Parmesan or vegetarian hard cheese, finely grated
Method
Step 1
Preheat the oven to grill, or use a hot grill pan and a drizzle of extra virgin olive oil.
Step 2
Grill the corn on the cobs for 10mins, or until starting to colour golden and in some places just blackened.
Step 3
Add the sour cream, feta, lime juice, chilli paste, smoked paprika, and a pinch of pepper to a blender, and blend until smooth.
Step 4
Serve the grilled corn with a drizzle of the feta sauce, grated parmesan and fresh coriander on top.
