Tofu steak burger

A delicious and hearty vegan burger that will even satisfy the meat-eaters!

Ingredients

Serves: 2

  • 280g tofu, cut into 4 steaks
  • 1 tsp mild or hot curry powder
  • 2 tbsp extra virgin olive oil
  • 2 tsp soy sauce
  • 2 x wholegrain bread rolls
  • 1 head romaine lettuce
  • 1/2 cucumber, sliced
  • 1 tomato, sliced
  • 2 slices cheddar cheese or vegan alternative
  • 1 tbsp whole egg mayonnaise or vegan alternative
  • 1 small red onion, raw or caramelised

Method

Step 1

Drain tofu and press with a paper towel to remove as much excess water as possible.

Step 2

In a small plate, combine the soy sauce and curry powder to create a marinate paste. Season lightly with salt and pepper.

Step 3

Heat 2 tbsp olive oil in a non-stick frying pan over medium heat. Place the marinated tofu in the pan, and cook on each side for several minutes, or until golden brown and crispy.

Step 4

To arrange the burger, lightly toast the sliced bread rolls on the frying pan or heat in a toaster. Assemble the burger with the lettuce, cucumber, tomato, cheese, two tofu steaks each and condiments of your choice.
