Ingredients
Serves: 8
- 2 tbsp extra virgin olive oil
- 2 brown onions, diced
- 4 garlic cloves, finely diced or minced
- 2 large carrots, finely diced
- 750g beef mince
- 1 1/2 tbsp dried oregano
- 1 1/2 tbsp dried thyme
- 2 eggs
- 8 tbsp tomato puree
- 4 tsp Worcestershire sauce
- 100g breadcrumbs
- 1 tbsp butter
- 440g streaky bacon (optional)
Method
Step 1
Preheat the oven to 200°C/180°C fan.
Step 2
Heat the oil in a large non-stick frying pan, over medium heat. Fry the onions, garlic, and carrot, until softened.
Step 3
Place all of the remaining ingredients (except for the bacon and butter) into a large mixing bowl with the softened onion, garlic, carrot, 6 tbsp of tomato puree, salt and pepper, and mix well. Leave 2 tbsp of tomato puree to coat the top of the meatloaf.
Step 4
Generously line a small loaf tin with butter, then the bacon (if using), with parts of the bacon left hanging over the top of the tin to then cover the meat mixture with.
Step 5
Fill the loaf tin with the meat mixture, and evenly coat with 2 tbsp of tomato puree mixture and bake for 30-40mins, or until the bacon starts to brown.
Step 6
Serve with cauliflower mash and your favourite steamed vegetables.
