Chilli crab linguine

Ingredients

Serves: 4

160g wholewheat linguine, tagliatelle, or spaghetti pasta

2 tbsp extra virgin olive oil

4 tbsp butter

1 brown onion, finely diced

5 garlic cloves, finely diced or minced

1-2 large red chillies, finely diced

300g white crab meat

2 lemons, 1 juiced, 1 sliced

120g rocket

2 courgettes, ribboned

1 large handful fresh parsley, roughly chopped

40g parmesan cheese, grated

Method

  1. Cook the pasta as per packet instructions.

  2. Heat the oil and butter in a large non-stick frying pan, over medium heat.

  3. Fry the onion and garlic for 3mins, or until softened and golden.

  4. Add the chilli (2 chillies is very spicy) and crab meat, and stir for 2-3mins.

  5. Add the juice from 1 lemon, the rocket, courgette, and parsley, and turn the head heat to low. Stir for 2-3mins or until the rocket has wilted down.

  6. Turn off the heat and add the cooked pasta to the crab mixture.

  7. Serve with parmesan, lemon wedges and a side salad.
