Stewed Fruit

250g fresh or frozen fruits (e.g. 2 apricots, 2 pears, 2 peaches, or 250g berries)

1⁄2 tsp ground cinnamon (optional)

1⁄2 lemon, juiced (optional)

Method

  1. If using fresh fruit, wash and chop into even chunks. Discard any stones, stems, and seeds.

  2. Add the fruit to a saucepan along with 2 tbsp of water, lemon juice (if using), and cinnamon (if using). Cover with a lid and simmer over medium heat to allow the fruit to break down gently. Stir occasionally.

  3. Once the fruit has broken down to a soft texture, stir and check the consistency. If watery, cook a little longer without the lid to evaporate any excess water. You want it to be slightly thick. You should aim for anywhere between 10-20 mins of total simmering time, depending on the quantity and types of fruit used.

  4. Allow to cool and store in the fridge in an airtight container or jar. Use within one to two weeks.

Second Nature special tip

The lemon juice works particularly well with berries e.g. strawberries. You can also double or triple the quantities in this recipe to create larger batches of Stewed Fruit.
