60g frozen berries
2 ½ tsp½ chia seeds
4-5 tbsp water
50g coconut oil
100g peanut butter
½ tsp vanilla essence
Method
Heat the berries, chia, and water in a small saucepan over medium heat.
Stir constantly, allowing the chia to swell. As the chia starts to swell and the berries begin to reduce, smash the berries with a fork or the back of a spoon.
Pop the berry chia mix in the fridge to cool.
Melt the peanut butter and coconut oil in the microwave for 30secs, or for 30-60secs using a double boiler. Once melted, stir in the vanilla.
Arrange 8 mini liners on a plate or in a mini muffin tin. Spoon the peanut butter mix into each liner, roughly ⅓ of the way. Place them in the freezer for a few minutes, or until they have set.
Once set, fill each with a dollop of berry jam, and flatten using your fingers. Cover the tops of the cups with the remaining ‘peanut butter’.
Place in the freezer for at least 10mins to set.
You can keep them in the fridge or freezer and enjoy as a delicious dessert or snack.
