Lemony Green Beans

Ingredients

Serves: 2

200g green beans, trimmed

1 lemon, zested and juiced

1-2 tbsp extra virgin olive oil

Method

  1. Bring a pan of salted water to boil, and either boil or steam the prepared beans for 4-5mins, until tender.

  2. In a bowl, zest and juice the lemon. Add the oil, a pinch of salt and pepper, and whisk to combine.

  3. Drain the cooked beans, add to the dressing, and stir to combine. Taste, and add extra lemon juice if necessary.

  4. Serve warm.
