Ingredients

1kg chicken wings
10g whole wheat flour
1 tbsp extra virgin olive oil
2 garlic cloves, minced
2cm fresh ginger, minced
½ large orange, squeezed
2 tbsp soy sauce
1 tbsp chilli paste
1 heaped tbsp oyster sauce
2 spring onions, finely sliced
1 tsp white sesame seeds
Method
Preheat the oven to 200°C/180°C fan/gas mark 6.
Pat the chicken wings completely dry with a paper towel.
Cover the dry chicken wings with the flour, a pinch of salt and pepper, and bake for 20mins, or until golden brown.
While the chicken is cooking, make the sauce. Heat the oil in a small saucepan, over medium heat.
Fry the garlic and ginger for 2mins, or until golden.
Add the orange juice, soy sauce, chilli paste, and oyster sauce, and cook for 3mins, or until bubbling and reduced.
Take the chicken wings out of the oven and cover evenly with the sauce. Pop them back in the oven for 15-20mins, or until sticky and just charring.
Serve topped with spring onion and sesame seeds.
