Ingredients
Serves: 2
1 small cauliflower, cut into thick steaks
1 ½ tbsp extra virgin olive oil
½ tsp ground cumin
½ tsp ground coriander
½ tsp cayenne pepper
½ tsp ground turmeric
1 tsp ground paprika
100g spinach
200g plain natural or Greek yoghurt
1 large handful fresh mint, finely chopped
1 large handful fresh parsley, finely chopped
½ cucumber, deseeded and grated
½ lemon, juiced
Method
Preheat the oven to 200°C/180°C fan.
Mix all the spices together in a small bowl and set aside.
Cover cauliflower steaks in oil, then lightly massage spice mixture into the oiled cauliflower.
Bake for 25-30mins (timing will depend on the thickness of the steaks).
Prepare the yoghurt dressing by mixing all the ingredients into a small mixing bowl.
Lay the spinach onto a place, place the warm cauliflower steaks from the oven on top of the spinach, and enjoy with the dressing on top.

If you have a large cauliflower, double the herbs, oil, and yoghurt dressing and serve for 4 people. Or, use leftover cauliflower for another Second Nature recipe, such as the Butter Chicken.
