1 tbsp butter
1 tbsp extra virgin olive oil
1 onion, diced
1 red pepper, diced
100g button mushrooms, sliced
½ tsp dried parsley
½ tsp dried oregano
100g spinach
6 eggs, beaten
Dash of milk
100g Cheddar cheese, grated
2 small tomatoes, sliced
Method
Preheat the oven to 180°C/160°C fan.
Line an ovenproof baking tray with butter.
Heat the oil in a non-stick saucepan, over high heat. Fry the onion, peppers, mushrooms, and herbs for 1-2mins, until slightly softened. Add the spinach and wilt for 1min.
Beat the eggs, milk, and cheese in a small mixing bowl, and add salt and pepper.
Line the base of a baking dish with the lightly cooked vegetables.
Pour the egg mixture over top and lightly place the sliced tomatoes on the surface. Place in the oven and cook for 30mins, until golden on top.
Cut into squares and enjoy hot or cold.
