Parmesan garlic salmon

Ingredients

Serves: 2

2 fresh or frozen salmon fillets, deboned and skinned

2 tbsp butter

2 garlic cloves, finely diced or minced

60g parmesan, grated

2-3 tbsp fresh, flat-leaf parsley, chopped

Method

  1. Preheat the oven to 200°C/180°C fan.

  2. Line a roasting tray with baking paper, or grease lightly with butter. Add the salmon and season with salt and pepper. Set aside.

  3. Heat the butter in a small frying pan, over low heat. Gently fry the garlic for 2-3mins, until softened.

  4. Stir in the parmesan, parsley, and a pinch of salt and pepper, until the parmesan melts.

  5. Spread the mixture over the salmon. Bake in the oven for 10-15mins, or until just cooked through. If using frozen salmon, cook for 20-25mins.

  6. While the salmon is cooking, prepare steamed green beans (steam for 5mins) or tenderstem broccoli (steam for 7-9mins).

  7. Serve together and pour the remaining sauce from the roasting tray over the greens.
