200g green beans, trimmed
1 lemon, zested and juiced
1-2 tbsp extra virgin olive oil
Method
Bring a pan of salted water to boil, and either boil or steam the prepared beans for 4-5mins, until tender.
In a bowl, zest and juice the lemon. Add the oil, salt and pepper, and whisk to combine.
Drain the cooked beans, add to the bowl of dressing, and mix. Taste and add extra lemon juice if necessary.
Serve warm.
