Spiced fish pitta pocket

Ingredients

Serves: 2

2 cod loin fillets

½ tsp ground cumin

½ tsp ground ginger

¼ tsp ground cinnamon

¼ tsp ground coriander

¼ tsp ground cayenne pepper

¼ tsp ground paprika

1 ½ tbsp extra virgin olive oil

2 wholemeal pitta breads

1 tomato

1 romaine mini lettuce head

1 carrot, shredded

4 radishes, sliced

Method

  1. Cover the cod fillets with the spice mix evenly.

  2. Heat the oil in a small, non-stick saucepan, over medium heat.

  3. Fry the fish fillets for 4-5mins, depending on thickness.

  4. Fill the pitta breads evenly with salad ingredients.

  5. Allow the fish to cool slightly before adding to the pitta. And enjoy!
