Ingredients

105g Cheddar
85g parmesan or vegetarian hard cheese
50g Philadelphia soft cheese
100g ground almonds (almond flour)
1 egg
½ tsp sea salt, to top
1 tsp oregano
Method
Preheat the oven to 220°C/200°C fan.
Mix the Cheddar, parmesan, Philadelphia, and ground almonds in a small, microwave-proof bowl. Heat in the microwave for 1min, or until melted. Mix thoroughly after microwaving.
Allow to cool slightly before adding the egg, salt, and oregano.
If the cheese is too hard to mix the dough into a ball, microwave for a further 20secs.
Place the dough ball onto a baking tray lined with baking paper. Place another sheet of parchment on top and press the dough out to ¼-½cm thick biscuits.
Cut into small squares before baking.
Bake for 10mins on one side, then cover with another baking tray and the baking paper used previously. Flip the biscuits and cut lightly again. Bake on the other side for 10mins.
Serve with dips and/or vegetable sticks.
