1 large cauliflower, cut into florets
2 tbsp double cream
2 tbsp butter
40g Cheddar cheese, grated
1 tbsp extra virgin olive oil
1 small onion, diced
1 garlic clove, roughly chopped
500g beef mince
2 tbsp tomato puree
2 celery stalks, finely diced
2 carrots, finely diced
150ml beef stock
5 fresh thyme sprigs or 1 tbsp dried thyme
2 dried bay leaves
50g Cheddar cheese, grated
Method
Preheat the oven to 200°C/180°C fan/gas mark 6.
Prepare the Second Nature Cauliflower Mash, but with the ingredient quantities listed in this recipe.
Heat the oil in a frying pan, over medium heat. Fry the onions and garlic, until softened.
Add the beef mince and break it up with a wooden spoon into small chunks. Cook until browned.
When the beef is browned, add the tomato puree, celery, and carrots. Stir and cook for 3mins.
Add the stock, thyme leaves, and bay leaves to the beef mixture, and season with salt and pepper. Cook for 15mins, or until the liquid is reduced.
Place the cooked beef mix into a 2.2L (roughly) oven-proof baking dish and flatten. Spread and cover with Cauliflower Mash evenly on top, and sprinkle with the remaining 50g of cheese.
Bake for 15mins, or until the cheese on top is golden brown.
