Ingredients

Serves: 4

12 cos lettuce or little gem leaves

1 tbsp sesame or extra virgin olive oil

2 garlic cloves, finely diced or minced

4cm fresh ginger, minced

500g pork mince

1 tbsp soy sauce

2 tbsp oyster sauce (optional)

2 spring onions, sliced

2 limes, one juiced and one cut into wedges

100g bean sprouts

1 handful fresh coriander leaves

4 tbsp roasted unsalted peanuts, chopped

Method

  1. Lay the lettuce leaves out on a serving dish.

  2. Heat the oil in a large frying pan, over medium heat. Fry the garlic and ginger until they’re lightly coloured.

  3. Add the pork mince and break it up with a wooden spoon. Fry for 3-5mins, or until evenly browned.

  4. Add the soy sauce, oyster sauce (if using), spring onions, and lime juice. Cook for 2mins.

  5. Stir in the bean sprouts and then remove from the heat.

  6. Spoon the pork mixture into the lettuce leaves. Garnish with coriander, peanuts, and lime wedges.
