2 fresh or frozen salmon fillets, deboned
2 tbsp butter
2 garlic cloves, finely diced or minced
60g Parmesan, grated
2-3 tbsp fresh, flat-leaf parsley, chopped
200g green beans or Tenderstem broccoli
150g frozen peas
Method
Preheat the oven to 200°C/180°C fan/gas mark 6.
Line a roasting tray with baking paper, or grease lightly with butter. Add the salmon and season with salt and pepper. Set aside.
Heat the butter in a small frying pan, over low heat. Gently fry the garlic for 2-3mins, until softened.
Stir in the Parmesan, parsley, and a pinch of salt and pepper, until the Parmesan melts.
Spread the mixture over the salmon. Bake in the oven for 10- 15mins, or until just cooked through. If using frozen salmon, cook for 20-25mins.
While the salmon is cooking, prepare steamed green beans (steam for 5mins) or Tenderstem broccoli (steam for 7-9mins). Blanch frozen peas by placing them in boiling water for a few minutes, or until they defrost.
Serve together and pour the remaining sauce from the roasting tray over the greens.
