Chocolate mousse

Ingredients

Serves: 4

100g 90% chocolate, broken into pieces

1 tbsp butter

½ orange, zested, finest grating setting

25ml fresh orange juice

25ml Grand Marnier or extra orange juice

3 eggs, separated into yolks and whites

Method

  1. Add the chocolate, butter, Grand Marnier, orange zest, and orange juice to a medium-sized glass bowl. If you aren’t using Grand Marnier, add 50ml of orange juice in total. If you prefer a plain mousse, add 25ml boiling water instead of orange juice or Grand Marnier.

  2. Heat the glass bowl over a saucepan of boiling water. Don’t let the bowl get too hot (take it off the heat occasionally).

  3. When fully melted, give the mixture a final stir and put it on the side to cool down for 5-10 minutes

  4. Once the melted chocolate mixture has cooled to a ‘warm’ temperature, stir in the 3 egg yolks.

  5. Whisk the 3 egg whites using an electric whisk until soft peaks form.

  6. Using a large tablespoon, start to gently fold the whisked egg whites into the chocolate mixture, one tablespoon at a time.

  7. Pour the mixture into 4 ramekins or small bowls, cover with clingfilm, and place into the fridge. Serve with single or double cream, with optional berries of your choice.
