6 large eggs
4 tbsp wholemeal flour
120g Cheddar cheese, grated
300g cottage cheese
2 courgettes, grated
3 spring onions, sliced
2 tbsp extra virgin olive oil
Method
Preheat the oven to 180°C/160°C fan.
Whisk the eggs in a large bowl until combined. Add the flour and mix well.
Add both cheeses, courgettes, spring onions, oil, and a pinch of salt and pepper. Stir to combine.
Line a medium or large oven-proof dish with baking paper and pour in the egg mix.
Bake for 25-30mins and then check for a slight wobble in the centre (return to the oven for another 5-10mins if not). It will continue to cook and firm up as it cools, after you take it out of the oven. The top should be lightly browned.
Serve with a side salad for added crunch. Store in an airtight container and consume within a week.
