Method

  1. Trim the stem off the cauliflower and finely dice. Chop the head of the cauliflower into even, golf ball-sized chunks. Place it in a large bowl and add the cream and butter.

  2. Cover with a lid or a plate and microwave on high for 4mins. Remove and stir to evenly coat the cauliflower.

  3. Continue cooking for 3-4mins. Poke with a sharp knife to check, there should be no resistance when ready. Continue cooking if necessary.

  4. Transfer into a blender or food processor and add the cheese. Season with salt and pepper.

  5. Blend until very smooth. Taste for seasoning. It can be reheated in the microwave if necessary.
