Method

  1. Sear the lamb in a hot frying pan for a few minutes with salt and pepper, no oil. Once browned, transfer to the slow cooker.

  2. Add everything to the slow cooker besides the spinach, double cream, and coriander.

  3. Cover the slow cooker and set to low for 5-7hrs (high for 3-4hrs).

  4. Add in the spinach and double cream, and stir to incorporate.

  5. Serve with fresh coriander.
